Are you having trouble eating all the fresh tomatoes you are getting from your garden? I was too the other day. One healthy snack or appetizer I love is fresh tomato salsa, aka Pico de Gallo. So I decided to make up batch of it and share the recipe with you today. The flavors of home grown tomatoes, cilantro, red onion, and jalepenos make this recipe delicious! And it’s so EASY! Just chop and mix. It will also stay fresh in the refrigerator for about a week. (Even though it doesn’t last that long in our house)
There are also many health benefits provided by the veggies in this fresh tomato salsa – tomatoes are widely know for their outstanding antioxidant and lycopene content, cancer fighting red onions also aid in weight loss, and cilantro has many known healing properties and is well known in parts of Europe as the “anti-diabetic” plant. Serve and eat with your favorite bag of organic chips. I like the organic Blue Corn Tortilla chips or Lime Tortilla chips. What’s your favorite? Enjoy!
Fresh Tomato Salsa (aka Pico de Gallo)
Ingredients:
- 2 cups diced fresh tomatoes
- 1 cup chopped red onion
- 4 cloves of minced garlic (more or less depending on your taste)
- 1/2 bunch chopped fresh cilantro (more or less depending on personal preference)
- 1/2 cup chopped cucumber
- 2 teaspoons fresh lime juice
- 1/2 teaspoon sea salt
- pepper to taste
- Optional: 1-2 jalepenos if you like it spicy
Directions:
- Combine all ingredients in a medium size bowl.
- Mix well and serve with your favorite tortilla chips
