White Chocolate, Pecan, Blueberry Cookies

These gluten-free cookies are jam packed with good fats from pecans and antioxidants from dried berries to provide many health benefits so you don’t feel guilty, and just enough sweet from white chocolate morsels that you think you are getting away with eating something decadent.

Not only are these white chocolate, pecan, blueberry cookies delicious, they are also good for you so you can eat them guilt-free. (All in moderation of course) The antioxidants in blueberries include many different types of anthocyanins which are the colorful pigments that give many foods their wonderful shades of blue, purple, and red.  These anthocyanins have been proven to improve our nervous system, brain health, and even more recently our memory.  The fiber, good fats and anti-aging benefits in pecans help with weight loss, boost heart and immune health, and slow sign of aging such as fine lines, wrinkles, and pigmentation. So enjoy!

 

White Chocolate, Pecan, Blueberry Cookies

Healthy White Chocolate Berry cookiesIngredients:

  • 4 cups almond meal
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/4 cup coconut oil
  • 1/4 cup raw honey
  • 2 organic eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract
  • 1 cup pecans, chopped
  • 1/2 cup mini white chocolate chips
  • 1/2 cup dried blueberries (you can use any dried berries)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl combine the almond meal, baking soda and salt. Mix well.
  3. Over low heat in a small saucepan, melt coconut oil and honey. Add to dry ingredients in bowl.
  4. Add eggs and mix well.  Add vanilla and almond extracts.
  5. Add pecans, chocolate chips and blueberries. Mix until well combined.
  6. Shape dough into golf ball sized balls and flatten onto cookie sheet.
  7. Bake for 12-15 minutes or until golden brown.
  8. Allow to cool 5 minutes before removing from pan.
