Avocado Stuffed Tomatoes
Ingredients for 4 servings:
4 large ripe tomatoes
2 ripe avocados
2 lemons (juiced)
1 clove garlic (minced)
2 scallions (minced)
2 Tablespoons fresh cilantro (minced)
Tamari to taste
Directions:
- Cut off tomato tops and scoop out seeds and pulp
- Peel and mash avocado
- Add remaining ingredients to avocado mixture
- Stuff tomatoes with avocado mixture
- Serve on bed of greens or sprouts
