Avocado Stuffed Tomatoes

Try this easy, flavorful recipe that can be used as an appetizer or a side dish at dinner.  It has an avocado for your “good” fats along with the benefits of lemons, garlic, and cilantro.  Lots of health benefits!

Avocado Stuffed TomatoesGood Fats, Good Carbs with Avocado Stuffed Tomato

Ingredients for 4 servings:

4 large ripe tomatoes

2 ripe avocados

2 lemons (juiced)

1 clove garlic (minced)

2 scallions (minced)

2 Tablespoons fresh cilantro (minced)

Tamari to taste

 

Directions:

  1. Cut off tomato tops and scoop out seeds and pulp
  2. Peel and mash avocado
  3. Add remaining ingredients to avocado mixture
  4. Stuff tomatoes with avocado mixture
  5. Serve on bed of greens or sprouts
