Homemade Turkey Noodle Soup Recipe

Are you roasting a turkey for Christmas this year? What do you do when you are tired of eating left over turkey? My mom used to make the most delicious turkey soup with the left overs and it was always my favorite homemade soup – so fresh and flavorful! Add a nice crusty piece of french bread to make it complete! My mouth is watering already! So I wanted to share with you my favorite Turkey Noodle Soup recipe. Homemade Turkey Noodle Soup Recipe

Makes 6 Servings

Ingredients:

  • 1 tablespoon coconut oil or ghee
  • 1 small onion, diced
  • 3 medium carrots, cut into 1/4-inch coins
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 teaspoon sage
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 cups water
  • 2 cups macaroni noodles (brown rice pasta if gluten free)
  • 2 cups leftover turkey meat, shredded
  • 2 tablespoons arrowroot, mixed with 1/4 cup water
  • 1/2 cup parsley, fresh, chopped

Directions:

  1. In a large soup pot warm the oil on medium heat.  Add onions, carrots and celery and sauté until soft, about 5-7 minutes.  Add garlic, sage, thyme, salt and pepper.  Cook for about 30 seconds longer or until fragrant.
  2. Add water and bring to a boil then reduce to a simmer.  Add the pasta and cook until soft, about 10 minutes.
  3. Add shredded leftover turkey meat and cook until heated through.
  4. To thicken the broth add a slurry of 2 tablespoons of arrowroot to 1/4 cup water.
  5. Taste and season as desired.  Fold in fresh parsley just before serving.
