Flavorful Baked Lemon Chicken

Here is a delicious lemon chicken recipe that you can dress up or dress down with side dishes.  So moist and flavorful!  Enjoy!

Baked Lemon chicken

BAKED LEMON CHICKEN

Ingredients:

  • 4 boneless chicken breasts
  • 1 whole lemon
  • 1 Tablespoon lemon zest
  • 2 Tablespoons lemon juice
  • 2 Tablespoons fresh minced garlic
  • 1/3 cup white wine
  • 1 Tablespoon dry thyme
  • 1 Tablespoon dry rosemary
  • salt/pepper to taste
  • olive oil

Directions:

  1. Preheat the oven to 425 degrees.
  2. Wash chicken, dry and set aside.
  3. In a medium saucepan, heat oil over LOW heat and add garlic. Cook garlic for about 2 minutes. 
  4. Add the lemon zest, lemon juice, white wine, thyme and rosemary. Bring to a boil and reduce the heat to a simmer. Add a small pinch of salt and pepper. Simmer for 3-5 minutes.
  5. Pour sauce into an oven safe dish. Add chicken. Drizzle olive oil on the skin. Sprinkle with salt and pepper. 
  6. Cut half the lemon into thin rounds. Place lemon rounds in between chicken and arrange a few on top. Bake for 35-40 minutes. 
  7. Broil for about 2 minutes just until top starts to brown. Remove the chicken from the baking dish and serve.
