Chicken Guacamole Sandwich: Teenager Approved

Happy Summer! I hope you are enjoying time with family and friends, vacationing or just sitting outside getting your Vitamin D from the sunshine. I love cooking in the summer because I find that the meals are easier to make, mostly grilling or salads, and still healthy. The one challenge I’ve come up against is making something healthy for my teenage son when he is starving and wants to eat immediately. Something that’s convenient, easy, and healthy. Well I think I found it!  Check out my Chicken Guacamole Sandwich! My son loves it, it keeps him feeling fuller longer with the good fat (avocado) and good protein (chicken), and the organic whole grain bun gives him some quick energy. Chicken Guacamole Sandwich

Ingredients:   Makes 4 regular servings or 3 large servings

  • 2 1/2 cups diced cooked chicken breast (I bought a roasted organic chicken)
  • 2 ripe avocados
  • 13 cup chopped onion
  • juice of one fresh lime
  • 2 Tablespoons chopped cilantro ( I added 3 T. since we love it)
  • 4 organic whole grain buns or rolls
  • sea salt & pepper to taste

Directions:

  1. Scoop out and mash the avocados with a fork in a medium size bowl.
  2. Add the chicken, onion, lime juice, cilantro, and salt and pepper to the avocados and mix.
  3. Toast the buns
  4. Scoop 1/4 of the avocado mixture onto each bun and voila!
  5. Serve with a fresh side salad for a healthy, delicious complete meal.
